I make a mean Spinach and Haloumi curry. My missus is vegetarian. When I first moved to Cornwall you couldn't get Paneer cheese anywhere, so I substituted it for Haloumi. A bit of Greek / Indian fusion cooking. ****ing top notch it is :)
Paneer is simple to make. Just squeeze lemon or vinegar into boiling milk (full fat) and press the curds with something heavy.

Yeah I've made it before, but you need loads of milk to get a decent amount of paneer. You end up with loads of whey and I didn't really know what to do with it all. Cheaper and more efficient to buy it, you an get paneer now down here. But personally I prefer it with haloumi.
