Parboil first. Shake them in a collander to rough them up. Apply salt and flour. Roast in goose fat until crispy golden-brown. Mmmmmmmmmmmm
As far as veg is concerned: Peas, carrots, spring cabbage, straight cabbage, parsnips, sprouts, carrot and turnip. Definite no-nos: Broccoli (I know it's good for you but I hate it), spinach (too strong), anything weird and 'foodie'.
I tried the whole rolling the spud in flour... didnt like it... I stick to par boiled roasted i goose fat and basted and turned every 15 mins...
My palate has changed so much that I now even like cauliflower and I used to despise it. I especially like caulli cheese. I was on a scout camp once, remember it to this day as it was in the foothills of Ben Nevis and they were simpler times (!), the scout leader force fed me cabbage. Tears and everything ensued (i was 12) and I vowed to never eat the stuff again. I now ****in' loves iit. I'll eat parsnip but it freaks me out a bit, it's too sweet.
S..t! Forgot cauliflower, especially with cheese. Yeah. I used to HATE sprouts when I was a kid. I now have thirds with Christmas dinner!
May have used too much flour. You don't need a lot. It helps the crisping process. Basting and turning is second nature. Shouldn't need mentioning.
Nooo a roast is not a roast without parsnips.. par boiled with the middle bit trimmed out as much as poss, when i say par boiled literally 3 mins in boiling water.. doused in goose fat roasted and for last 15-20 mins drizzle honey on them... mazin. Cauliflower cheese is a great shout, made some with my last roast massive tray of the stuff, have to say its the one thing i like to burn as the crispy bits on top are by far the best...
If you use the right potato you should need flour... King eddie or maris piper they crisp up just fine... ] Sprouts i used to hate them.. I like eating them just for the aftermath as they do produce amazing flatulence...
