Glad Davis is playing but the fact that Cork is not playing as one of the two holding midfielders seems to suggest he is not considered a long term first team player.

Hmm, I think I might have a better answer. Schneiderlin is out, so that might suggest that Jack ought to take his place. But Wanyama and Cork are unproven as yet. However, Wanyama is one card away from a suspension, and if he gets one tonight, he won't play on Saturday. So it makes sense to hold Cork in abeyance just in case he partners Schneiderlin in their proven familiar pairing. Just a thought. Steven Davis is also very good at doing the sort of job required, and he has had much more game time.
