I knew sweetbreads were testes courtesy of Great British Menu.

Also, was it Fletchers that broke the mould and sold both savoury and plain sausage rolls? What was the difference?

Savoury sausage rolls have herbs in them.

As does Haslet ( probably to mask the strong smelling cuts of meats (offal) they use).
 
Sweetbreads can be bollocks, but they're not usually, they're more normally the neck, cheek or ear of an animal.

Sweetbreads is basically a name given to things that no-one will eat if you tell them what they really are.

Aaah, i didnt know that. Well it was defo gonads on the occasion I saw. Shudder.
 
I had a delicious meal in a restaurant in Barnes, called Sonny's.

It was a Tartlet of Lambs Sweetbreads (thyroid, i was informed) with liquorice sauce.

It worked so well, i had the same dish when i returned.
