Was this the rat that was declared extinct because of rising sea levels where it lived?
Yes - the Bramble Cay melomys, thought to be the first mammal to become extinct due to climate change. Named after the Barrier Reef island that was its home, the Australian Government officially declared it to be extinct on 20th February 2019 after no sightings since 2009.

No - nothing at all to do with animals, whole or part thereof. Which means it's to do with plants - one particular plant to be precise.
As a clue, I suspect Elon Musk may have been very interested.
