4oz (125g) plain flour 1 medium or large egg half pint (250ml) milk (whole milk best) pinch salt Use these ratios and increase the amounts depending on how many pancakes you need. This amount gets you about 6-8 pancakes depending on the size of the pan. Sieve the flour and pinch of salt into bowl, crack the egg and beat into the flour to form a paste, add a little milk if too stiff. Keep beating all lumps out, working the flour helps release the gluten. Gradually add remaining milk and whisk. Always leave batter to stand before cooking, an hour is ideal or even over-night (a bit late to advise this now seeing as it is pancake day today) and give it a stir before cooking. Add more milk if batter The flatter the pan the better, non-stick is best, get it on the heat and add a couple of drops of vegetable oil or spray oil. Wipe off excess and pour or ladle in batter swirling it around until the pan is covered. Lift up the edge and see if the bottom has started to brown, flip over with a spatula or be brave and flip it over in the air. Some people like to cook in butter but it can burn, a little oil in with the butter can help prevent it burning.
Pancakes went down a storm yesterday. Lashings of lemons & sugar, chocolate sauce and bananas, maple syrup too. I'm not a god-botherer so all that Catholic giving sh.it up stuff doesn't bother me but Lent does nicely coincide with the health kick so it's no snacks, biscuits, sweets, chocolates etc for me for the next month or two.
