Vertonghen might be a bit risky, judging by the black eye he's been sporting...Putting him, Toby, Jan and Rose behind the bar would also attract more punters and encourage them to stay longer, QED raising more money to bring in replacements for them. It's a win-win for all concerned, although I'd fear for Eriksen's ability to clear the first glass.
