    I sometimes buy my farmers mates meat where I know its had a decent life but, how are they treated at the slaughterhouse? But like I say, another day

    I like to sneak up on them myself... kind of like how luv catches sheep.... no seriously. humane and all that but I don't in general care enough.... i can't help thinking hey few billion peoepl would be laughing at this and want to be treated like these animals.

    but anyway... prime reasons for tough meat = bad slaughterer stressing animals.

    Your meat is never going to have the best of times at a slaughter house! But if you always buy the best you can afford and from local sources you will know that it has not been intensively farmed etc. i love this time of the year for game etc, any meat that is aged correctly will taste amazing - none of this bright red supermarket rubbish

    agreed again! darker = better.

    the science of oxidation that goes ito those packs is interesting... if anyone was interested. the plastic barrier properties etc
