If you have kangaroo, it has to be cooked medium rare. Otherwise it goes very dry and tough. It's a damn good meat though, bit gamey but very lean.

I've eaten some **** when I've worked around Asia. Dog, cat, rat, ****in grasshopper. All of it not my choice either, it's all the barge/rig had! Can see the cooks laughing their arses off in the kitchen when westerners are eating dog and the like.

I had 'camel' a couple of times whilst away.
It's like eating revels.. You don't know what you're going to get mouthful to mouthful.
The meat is very tasty but the 'softer' part of the hump is almost as soft as 'pate'.
The jury is still out ?!?!?

Bri - I had kangaroo fillet steak for tea last night.
Marinated it in olive oil for a few hours. Cooked it in the frying pan, about 4-5 minutes each side served with peas, carrots, Yorkshire pudding & gravy.
Absolutely divine. The juiciest, tastiest, tenderest meat I've ever had the pleasure to eat.
Thanks for the heads up, I'll definitely be having it again.
Next time I'm gonna marinate it in red wine before I put it in the olive oil & put the red wine into the gravy.
I'm drooling at the thought of it.

I had my ostrich last night. Very nice. Such an Irony meat with a bird texture is a bit weird like but very tasty. Prefer Roo though. You've read my mind, I was thinking of a red current sauce boozed up with bit of red wine for next time. <ok>

See I love pate. means I can have liver without the repulsive texture. Does it taste like pate?

Right this skippy meat, what's the score? I fancy a bit but I'm very picky about meat. Is it actual meat or is it processed? I can't eat processed meat. No way, I spew on contact with that kind of stuff... gristly bits in pre-packed food, never again.

I'm intrigued, although I'm **** at cooking, **** all this red wine stuff, just stick it on the griddle and eat it as it's cooking with a bit of salt and ketchup.

Kangaroo is gorgeous Terry, 100% Kangaroo meat. Fry it about 4mins each side and have it with a bit rice and salad, beautiful.

Wild Boar is really nice, as is Crocodile.

Buffalo is canny rank, Ostrich is absolutely vile.
