He was "searing" both sides! That's destruction. Am not a fan of pan frying anything (except a steak). Pan frying anything that requires oil (olive, rapeseed, etc) is not for me. Taints it IMHO.

Sea Bass is a meaty fish and as such should be seared. Butter and garlic is fish heaven. Or you could just surround good fish with metal and **** it the oven for 10 minutes. Shut up you turd!
...or, you could try steaming the delicious fish (in a tinfoil parcel in it's own delicious juices with herbs & spices of your choice) rather than frying the taste out of it? Jist a thot.
Oh dear! Aye because wrapping one of the most expensive fish you're ever likely to buy in aluminium is the best way to cook your quality sea fare! Will there be butter involved in these fishtastic metallic parcels?
