As far as I can discover there is no patron saint of cheese, however there is a patron saint of Florentine cheese merchants who is St. Bartholomew the Apostle

Genuine prayer, Saint Brigid of Irelland is the Patron St. of Dairy products, but no patron saint of cheese.....................so if the jobs vacant ;)
