Hmm, but you might be accurate. I'm actually not looking forward to screwing it up. I'm a pretty good cook generally, but sometimes things don't go quite to plan with roast meats, if I'm not entirely familiar with the type I'm cooking. It's fair to say that goose isn't an everyday meat for me.
Report back. I've never cooked goose and have always been tempted by it. The roasties with must be fantastic in all that fat.
Had goose fat roasties once in the last year. The resultant indigestion I suffered could have powered a city for a fair bit. I'll stick to my favourite olive oil for roast potatoes. But I will report back. Let's hope the reporting is of the right kind, eh.?
Olive oil? Not for really crispy roasties for me. Have you tried rapeseed oil instead? Gets to a hotter temperature and healthier than goose fat, giving lovely Spuds

Boil chopped potatoes for about 15 mins Really shake in the colander, to 'rough' up the potatoes Grab a few garlic cloves and crush by hand (no need to peel) - I just bang them on the chopping board Chop up some rosemary Put the garlic and rosemary in a pot and add olive oil - this will be used later Gently drizzle olive oil (not the above mix) over them and cook for around 25 mins. Carefully use a masher to flatten (and even slightly open the potatoes) Now drizzle your garlic/oil/rosemary mix over the potatoes and really shake them around. You can get olive oil to a high enough temperature, plus it is still way healthier than any other oil, including rapeseed.
Apparently it loses some of its healthy properties when heated...better used cold as in salad dressings.

All oils lose something. Nearly all oils become more harmful to health when heated. Especially past the smoke point. Latest research says that olive oil retains much of its healthy properties even past the smoke point. And it still way healthier than any other oil. And the last thing - it makes not a jot of difference whether you use extra virgin or just straight olive oil. The EV will offer more flavour. Some people call it a taint, I call it a taste, and one I happen to like as well.
Yes, I just did a quick review on line and you are right. Consensus is that olive oil is better than many other fats when heated. The health police would have you eat nothing....that way you should live forever....or not.
Yes, a physio told me the same a few years ago. He reckoned sunflower oil was better for cooking than olive oil.
That is so yesterday. Sunflower oil is now a deadly toxin. Wait till tomorrow....it will be back as the panacea to end all evils...including global warming. The answer really is not to have too much of anything...variety being the spice of life. The correct balance is between health (but take advice with some scepticism) and enjoyment....even a rare deep fried Mars bar won't kill you.
Yeah, these things are under constant review, of course. Rapeseed oil came back to popularity a few years back because it was said to be more healthy than olive oil when used in cooking. But that's been proven to be not true. Latest research puts olive oil way out there, and it doesn't matter whether it's first press or last press. It is the 'go-to' oil because it is, at the very worst, harmless past the smoke point. At all other points of use it is extremely healthy. Been using it even since I can remember. And you don't have to buy fancy stuff. Buy it from Aldi or Lidl and it is cheap enough. Their oil is very good quality, whether you're buying EV or ordinary. Elsewhere, in GB supermarkets, it can be a ridiculous price, and more often than not the quality is really poor. I use only olive oil as I am on a low fat diet because of my heart and now low sugar....if they ban protein I will be in trouble. I shall be very good generally and let my hair down for holidays and celebrations...can't bear people on a weight loss diet who analyse every mouthful when out for dinner. Enjoy for heaven's sake....one meal off the diet won't put a stone on over night.
