Elderflower, Also referred to as âcrack cocaineâ in our house, because of its addictive properties. Over the past 3 weeks, Iâve spent a lot of time walking around the neighbourhood with scissors, *acquiring* any flowers growing over fences. This morning, on the way back from the doctorâs, I stopped the car twice to jump out and pick a couple of flower heads. This whole business is getting out of handâ¦
Anyway, the reason for my stealth missions? Elderflower cordial and elderflower champagne. And I have been making BUCKETLOADS of the stuff. The three-year-old and I guzzle elderflower cordial mixed with soda water every day (Father Chrismas, please give us a sodastream). Even Skruff has been seen drinking a glass or two. For the three-year-oldâs birthday party recently, I offered bottles of cordial to mix with soda water. The party guests adored it, and we went through three litres of the magical yellow liquid, with many describing it as âlovely and refreshingâ.
Many thanks to the tea lady for introducing me to this humble flower/tree â she has about ten trees growing on her property, and together weâve been making loads of cordial. The flower season is nearly over, but if you know of any trees growing in your area, please let me know! The cordial keeps well in the fridge (it must be refrigerated or else it will ferment because of natural yeast present in the flowers), it apparently freezes well and is divine when poured over trifle sponge, used in jellies etc. etc.
