I'm sure you could adjust it and add chicken or pork instead - chicken thighs would be good, but you'd have to make more marinade and cook tge meat at same time as veggies. Irn Bru goes with everything
Another week, another Roasting Tin adventure. Spiced paneer with potatoes, tomatoes, peas and onion dressed with coriander and lime juice. Served with a naan. Bloody lovely! (Tried four of these recipes so far now and this was my second vegetarian...... I must be ill!!) A nice, mild spiced dish that worked beautifully with the paneer. If trying, i would personally recommend thinking about the recipe amounts as i cooked the stated amount that was apparently to serve four and we found it was just the right amount for us...... 2! If you fancy a veggie dish i highly recommend giving this one a go.
We regularly eat much bigger portions than suggested. We do a few of the veggie ones from the original Roasting Tin book, big hits - the gnocchi, and fusilli with peppers and mushrooms in particular. I’d be tempted to Chuck a bit of tandoori marinated chicken in with that though….

We had Fish & Chips for lunch sitting in the car on the cliff tops in Dunmore East looking over the estuary to Hook Head Lighthouse.......The sun was shinning, the sea was blue, fishing vessels were making their way back to port.......It was just lovely to be able to get out and about after months of restrictions..... Todays dip into the Roasting Tin, another new one.... Malaysian roast chicken with butternut squash, served with lentils and a wee mini naan. Smelt amazing when cooking, and tasted really good, but would up the chilli count again when I remake this. Made a slight detour off the recipe, and smothered the chicken in the paste before diluting it down with coconut milk. Also, couldn't find tamarind paste in any of my local supermarkets but found that lemon juice and vinegar is a taste replacement (Google can be dead handy sometimes). Served with lentils as Mrs can't eat rice. Followed up with the old favourite, strawberries and cream - yummy!
Did you have a wee donkey with your wee mini naan? Impressive, another one I need to do. Had a craving for meat today so went out and bought then cooked the ingredients for an original roasting tin recipe, crispy rosemary potatoes with steak. By now we have adulterated this recipe in loads of ways, abandoning the original dressing, bunging loads of smoked paprika and garlic pepper on the steak, serving with a rocket based salad with extra virgin olive oil and very thick balsamic vinegar. Spicy chipotle chilli sauce added to the steak. Said it was a treat for my son who starts a new job tomorrow, but of course it was for me, and just right for me to finish the bottle of Malbec opened yesterday. And then open another bottle of Primitivo. Has your wife’s health continued to improve?
Jesus, Mary, Joseph and the wee donkey Not cooked anything from the original book for ages, need to get it out a do something from it Yes mate, lots. She's not back up to full speed yet, but is getting there. Has a down day every four or five days, but only dependant on how much she's done in the preceding days - we've been doing a lot of work in the garden which can be tiring for most people, and she needs to regain her fitness. Scheduled to return to work in two weeks, phased to start with to see how she copes but it'll be a great relief to see her back. She's even talking about attending gigs again (yeehaaa!) which was a big fear of hers that she wouldn't be able to stand for two to three hours at a time (she lets me jump about in the mosh pit on my own most of the time anyway ).
Gnocchi, cherry tomatoes, red onion, courgette, Parmigiano, mozzarella and spinach with plenty of black pepper. Served with garlic bread and lemonade (the Mrs nicked the last can of Irn Bru for work without telling me dagnammitt!) From a ..........wait for it.........Aldi recipe!
Tandoori chicken with sweet potatoes and onion with side dressing of yogurt, Mango, cucumber, onion and mint. Served with chapattis and ice-cold sprite. Anybody else done this one? Enjoyed it, though with the amount of spices in it I expected it to have a little more punch. First time efforts I always try to follow the recipe completely before tweaking it on the 2nd attempt if needed. Not quite sure what would boost it up.....possibly a hotter curry powder....not necessarily looking for hotter though, just a little more oomph/tang.
Haven’t done this, looks the business though. Try adding a bit of ground cumin. Or more ground cumin.
