    After a lovely late afternoon g & t sitting in the garden we had spiced prawns and tagliatelli, think I mentioned these previously on here washed down with a glass of rose'........summer ain't it?

    Had a fine spiced aubergine & potato bake with coconut rice (yes Sb, from Roasting Tin) added garlic and fresh chilli. Very good.

    Kerala Stew
    With chicken

    A dish from Southern Indian with it;s creamy flavour of coconut milk, carrots, potatoes and spices.

    Lincolnshire sausages with onions, steak cut chips and beans. Followed up with some Davidstow Cornish 'Crackler' extra mature Cheddar, certainly tickled the taste buds...

    First Roasting Tin fail! Tried the asparagus omelette thingy. Nearly very good, but cooking times out and had to go back in the oven, to cook the potatoes and sweet potatoes properly, which meant the omelette bit was overdone. Had to happen sometime.

    After last nights disappointment (we’ve worked out the potatoes have to be sliced wafer thin to cook in the time allocated. And cheddar rather than parmigiano would add to the flavour) on an old favourite today, long slow pot roasted beef brisket, with a pile of mash and green veg, horseradish/English mustard to taste. Accompanied by a new red to me, Languedoc, a mix of grenache noir, Syrah and carignan which is very tasty indeed (started it a bit early.....)

    Bought some Chinese salt & chilli mix in Home Bargains yesterday, so made some chicken with onions, peppers and garlic, served on cauliflower rice.
    Washed down with tap water, and demolished by us all.

    Thai marinaded salmon and rice last night, tonight a banker roasting tin, gnocchi, mozzarella and tomatoes, with pine nuts, fresh basil and our addition pesto. Always a hit. Chicken for tomorrow marinading in ginger, coriander, chilli and lime.

    Back to the roasting tin tonight, a double up, with a smoky sausage, sweet potato and red onion traybake, accompanied by paprika roasted sweetcorn.

    It's very tasty... we used mozzarella as I didn't think my son would be too keen on feta, and it worked well.

    I've already gone off-piste and have been stealing bits from several recipes to fit the ingredients I've got, and haven't had a bad meal yet.

    I think that’s the desire of what’s her name, the author. I doubled the amount of mozzarella in the recipe tonight. In the past we have added a bit of strong blue cheese as well, but my daughters inspired idea for pesto was perfect.
