I go to the jazz festival in Vienne each summer and as this is just 20 mins away from Lyon, I tend to visit this city a lot. I love Lyon. However, I was disappointed that they used to have a Roman restaurant where you could eat genuine Roman food. By the time someone had told me about it, the restaurant had closed down. Lyon was the largest Roman city in Gaul and there is still an abundance of Roman remains to see. Interestingly enough, the most famous Roman cook was called Apicius . I have a book which includes some of his recipes as well as those from ancient Greece. I have seen an illustrated copy of Apicius in the museum shop in Lyon but the photos actually served to make some of the recipes look less appealing. It is reckoned that the original text of Apicius's cookbook is actually a forgery from the 4th century and that someone appropriated him name which still carried a degree of culinary clout 300 years after he had died. The recipe book I have is interesting but it is staggering how many ingredients are missing because they had not been discovered. No potatoes or tomatoes, for example.

Honestly, it kinda is. I'd imagine that, for a lot of us, cooking is going to end up being something of a refuge. I'm a B- cook at best, in large part because I rarely have time to make anything too elaborate, and because 90% of the time I'm cooking for just myself. But eating well is one of the few luxuries and sources of normalcy that we'll have for the next bit, and boy howdy we'll have the time.
I'll do my best. There isn't exact quantities our cooking is a bit taste and adjust as we go using whatever we've got. Mrs Jab is Indonesian the recipes are family cooking but she improvises as she goes so don't be afraid to do similar. For this she bought some small chicken breasts. trimmed and washed, marinated overnight in lemon juice. Flash fry to seal and colour and part cook. throw in chopped fresh ginger, sesame oil, salt, pepper, garlic, shallots, onion, lime leaves, candle nut paste if you can find it (or crush the nuts to make a paste). Into a pot with a litre of good stock simmer until the chicken is cooked. Taste and adjust as you go. We have garlic, ginger, chilli, cayenne pepper loads of different spice powders to vary flavours as we go. Oh there is a glass or two of wine involved, some goes in the food. Have fun cooking!
If it's pointless you get the trophy. This is therapy for isolationists or those close to it we could all be spending more time at home, good food is good for the soul. Ah soul food, anyone got any west indian recipes?
It needs to be ripe it's often not when used It's an accompaniment absorbing and complimenting flavours, a good moussaka is lovely.
