Kwality potatoes par-boiled, get them oot and wash in a colander. Rough the ****s up with a grater and let cool in said colander. Pre-heated oven dish with goose fat. Toss in the ruffed up tatties. Put in oven. Constantly annoy the tatties with prodding, forking, and spooning over of fat collected in oven dish.

I like to leave the spuds in the oven without disrupting them as too much opening of the door drops the temperature and the roasties soak up the fat instead of crisping up. Good and roasted on one side for about half an hour before flipping them over. Trick is not too much fat or they come out greasy, goosey does the business. Duck fat is ok but can have a bit of a cloying taste after a while.
