    Some classic Italian pizzas are supposed to have cheese. I'm not as familiar with Italy as I wish I was, but I'm aware of Roman pizzas often being cheeseless. However Neapolitan pizza has mozzarella, and they like their goat's cheese in Italy too.

    I am also partial to a Hawaiian pizza, and all the Americanised versions. Chicago-style pizza is an original dish in its own right. Don't get me started on "New York style" though. There is no "New York style". It's just regular pizza made in New York. By Italians.

    The absolute, absolute classic pizza is cheeseless, simply because cheese was too costly to manufacture. It just happens to come from the Neapolitan area too. The Roman Emperors often used to decamp to Naples for the winter climate, so they may have brought it with them. Agreed that particular Neapolitan pizza has mozzarella, or any available simple goat cheese [by that I mean non-cheddared or matured and not ricotta, of course]. Lots of the pizza varieties in Italy have been invented in New York, or the USA in general, and gone back to Italy, as demand has required of them.

    Incidentally, as I get older, my Italian genes must be showing through. I can't eat any cheddared cheese these days [huge indigestion], but only simple cheeses or goats cheese. I can eat Parmigiano though. Odd eh..?

    Ever tried the standard one, Dan..? It's better than all the rest. And a successful home made one is just so much better than any Pizza Hut or shop bought job. And no cheese. Tom would love it. I wonder if he likes toasted garlic though, because that's got to be in there too. And soft cooked onion slivers.

    I'm not too much a fan of fancy cheeses. If it's got mould on it then it makes me feel ill to think of eating it. No mould ever.

    It is very good. But it does require fresh, quality ingredients, and time if you're making it yourself. The tomato problem is important here. Can't be doing it with tasteless supermarket tomatoes.

    I try not to think of it as mould. At least don't make the connection between that kind of mould and the kind that grows on your food when it expires. Cheese mould is a different thing and is grown in controlled conditions. Yeah it's lots of tiny living things that you're eating, but the same can be said for yeast and whatever that **** is they put in Yakult.

    I had a pizza in Italy without cheese. It was fantastic. Yes, I like garlic and onion.

    I thought you would..! Pizza doesn't need cheese. Difficult to find a decent recipe without one though. Luckily, I know one. :)

    I once cooked a Madhur Jaffrey recipe called 'savoury custard' - it was hands-down the most hideous thing I've ever tasted.

    Is it an Indian thing? Google returns a lot of different results, some Indian and some Japanese. The Indian ones I'm slightly familiar with. The Japanese ones I have not seen before.
