I made it again last weekend was amazing. 2 cups plain flour 2 tbsp of cornflour 3tbsp of paprika 2tbsp of cayenne pepper 2tbsp onion powder Same of garlic powder 1tbsp of ginger powder 3tbsp white pepper (this is vital) Tbsp of dried ground up rosemary 2tbsp of salt Then lob in some black pepper. I’ve put cumin in before but prefer it without. If you have any mix left over whack a load of chilli powder in and do hot wings with the rest. with the chicken soak it for as long as possible in buttermilk. Good few hours ideally over night. If you can’t buy any squeeze some lemons into milk. Then when you’re ready take out the chicken. Put two egg whites in the bowl of buttermilk and whisk it. Then dunk the chicken back in the butter milk then into the flour mix. Then back in the milk and back in the mix. set your oven on 50 degrees. Batch cook in the fryer and put the finished ones in the oven on the low heat. Then when you’ve done them all. Re fry in the oil for a minute or so before serving. also frying temp around 175’
Have you seen not seen fat boy Kerridge's low calorie version? Was on BBC 2 Monday, some of that stuff looks good. My eldest has gone for food tech (or whatever the **** it's called) as one of his options, am going to try his version of 'fried' chicken. Then we can pretend he did it. Pretty much like all his course work tbf.
