"The square cap, or 'mortarboard', is optional for graduands at Cambridge. If you do decide to wear one on the day, you should take it off and carry it in your left hand inside the Senate-House."

You cannot graduate wearing it. There is absolutely not point in having a mortar board at a Cambridge graduation ceremony, and I know of no one who has taken one to a graduation.

So as I said, it's not excluded, it's optional

You know no one who's graduated from Cambridge, so that's hardly a piece of useful anecdotal evidence.
