@Peej
Mix chicken thighs with a dessert spoon of Jamaican curry powder and stick in fridge for the day.
Chop onions garlic ginger and fry liked you do with any curry so that they are golden brown add 1/2 tspn allspice and full tspn dried thyme.
Add a dessert spoon of the curry powder fry for about 5 minutes stirring all the time.
Add a chopped carrot, centimetre chunks add 500ml chicken stock.
Fry the thighs until golden add to the stock and add chunks of waxy potatoes, cook for 35 minutes.
Makes sure the veg is done or very nearly then add 1/2 a can of Coco milk and reduce to how you liked it which will take about 15 minutes.
Add whatever chillies you want at this point depending on what your family are like, I have to add at the end as Mrs luv thinks bell peppers are spicy.
I also add finely chopped raw spring onions.

The lamb looks banging.
Yeah it was very good. Dublin is great for food and even on weeknights anywhere decent was packed and not just bang in the centre. London is miles behind now let alone the rest of the country.
you go outside of the UK and find loads of places like you describe.
it’s either very Americanised or just very expensive.

When we were in France over the summer, we were amazed how much fast food, American style cafe's there are there now. Even in the smaller towns.
Their own fault though, they went through that period in early 2000's where they were serving up microwave food and then the wine declined because of the lack of care looking after vineyards. All caught up with them and it gave franchises the opportunity they wanted.When we were in France over the summer, we were amazed how much fast food, American style cafe's there are there now.
