I cooked spaghetti carbonara today exactly as my Italian friends from Rome cooked it .
Boil spaghetti with a bit of salt
Splash some good olive oil in a pan with 3 cloves of garlic whole to flavour the oil then remove as it goes brown.
Chuck in smoked pancetta and a finely chopped onion.
Mix 1 egg yolk with 1 egg and grate parmesan cheese in with ground pepper.
When the pancetta gets crispy drain the spaghetti and mix in the pan .
Remove from heat add the sauce and serve in the bowl you mixed the egg .
Grate more parmesan over.

It was a quick dinner (not tea ) for me and the kids so I used shop bought dried pasta. I do have a pasta machine and I do now how to make fresh pasta, thanks for your concern.
Now I know how Mary Berry felt after putting white wine and cream in her Bolognese. Having said that I'd never put white wine and cream in mine. Apparently the secret to a traditional Bolognese sauce is to use half beef and half pork, fresh tomatoes, salt & pepper, must simmer on the stove top for minimum of 2 hours. Some Italian bloke reckons this is the proper way how we do it in blighty is all wrong.
You don't need a recipe book for pasta sauce, its just variations on tomatoes, onions & garlic with other bits in it. A jar of Dolmio will do the trick too. I only tend to use recipe books for baking as the weights need to be correct, other than that it is all intuition and natural culinary flare.
