The Great British Barbecue

    It's that time of year again where the British public look at the weather forcast waiting for that first hint of sunshine and temperatures that are above freezing, on the first Sunday that this long awaited moment happens rusty barbecues are dragged from the garage and wire brushed until they resemble something that you could possibly cook on without the food killing you or your loved ones.

    The first sausage will be unedible, black on the outside an way too pink in the middle but we will persevere and by mid Summer we will have got the hang of it once again and sausages will be replaced by much more exotic fare.

    What are your plans for the barbeque season? Post any recipes, traditions, drinks soundtracks on here.

    Ingredients
    2-3 tsp jerk seasoning (you can add more than this if you like spicy food).
    1 tbsp light soy sauce.
    4 tbsp tomato ketchup.
    2 tbsp honey.
    8 small or 4 large chicken pieces, skin removed.
    A little vegetable oil, for greasing.
    ...METHOD
    How to make easy jerk chicken
    1. Put the jerk seasoning, soy sauce, tomato ketchup and honey into a big bowl and mix everything together.

    2. Carefully cut slits in the chicken meat, without cutting all the way through. Put the chicken into the jerk mixture and use your hands or a spoon to move the chicken around so that it is coated in the seasoning. Wash your hands thoroughly. Cover the chicken and put in the fridge for at least 20 minutes or overnight, if possible.

    3. Turn the oven on to 190°C/fan170°C/gas 5. Spoon the chicken and all the marinade into a heavy-based roasting tin lightly greased with a little oil.

    4. Cut one of the chicken pieces open to check that it is not pink in the middle. Cook for another 5 minutes if it is at all pink, then check again. Serve with rice and peas.

    Tip: To barbecue the chicken, preheat your barbecue in the usual way until it reaches the correct temperature. Cook the chicken, turning once, bearing in mind you may have to adjust the cooking time slightly depending on the size of the chicken pieces or how hot your barbecue is.

    I have my own way of doing it and it's simple but very nice.

    Cut slits in the chicken and add to a bowl add jerk season, honey, rum, salt and pepper mix well and leave for an hour and off you go direct on the BBQ

    Pineapple grills well... as does salmon...

    My favourite grilled food though is pizza. You've not tasted pizza perfection until you've grilled one.

    Of course, here in South Carolina, BBQ is synonymous with tender pulled pork served doused in a usually spicy mustard based sauce. Uncultured yanks up North use vinegar based sauce... or worse yet... tomato based.

    Real South Carolina pulled pork BBQ needs mustard!


    Yes I'm aware SC is not British... but I still hold hope the homeland will reconquer the territories... perhaps after Kim Big-Un destroys the US military and leaves the country free to being taken again by Britain.

    Many a minor war has been fought in the US over who has the best BBQ. As long as we are all in agreement it isn't Texas we are OK.

    Drinks wise I'm going for the litre bottles of Alhambra that Morrisons are selling at the moment and I'm on the lookout for a good bottle of tequila.

    Soundtrack is also tricky as barbeque usually means friends so you have to get some Summer tunes that everyone likes but also shows off your incredible taste in music. :tongue:

    I do a huge compilation play list every year and will post it once done.

    I'm not allowed to play my music. They're a bunch of ****ing philistines the lot of them.

    I just tend to put my Marvin Gaye triple CD on then and might get away with Adele!

    Mumfords first album I reckon would slip through the net and I can always chuck in the Beautiful South or some Kirsty MaCcoll.

    Other than that my girfriend just whines if I put on the good stuff.

    It is tricky to please everyone and I have by no means mastered the art. I tend to add 1 of my favs every 5 mainstream but as the day goes on I find it gets noticed more as people start chilling so will go to about 7/1 this year.

    I don't know the recipe because I'm an awful cook but I was at BBQ last year that had salmon in some kind of sauce. Was a good addition.

    BBQ rat-o-van.

    It's a rat that's been ran over by a van barbequed.. <ok>

    I don't do anything special with BBQ food.. I like things blackened covered in Ketchup. The cheaper the sausage the better..

    The only thing I do, is marinade pork ribs in honey, soy sauce and paprika .. Then burn the **** out of them. Give the bones to the dog and then enjoy the white ****s that ensue and fill my garden.. <ok>

    Also I drink cider over ice in the summer.. Bulmers apple. There is no need ever to drink lager.
