Bhuna Gosht (lamb, but would traditionally be Goat) Ingredients: 1kg Lamb, cut into large chunks 2 large Onions, sliced 250g Natural Yoghurt 1tsp Salt 1tsp Chilli Powder 1tsp Turmeric Pinch Asafoetida powder 1tsp Ground Coriander 1” Cinnamon stick 2” Root Ginger 2 tsp Poppy Seeds 3 Cloves 4 Cloves of Garlic 2 tblsp Ghee or Oil 1oz Butter Garnish with: 1tsp Garam Masala, fried Cashews and Julienne root ginger Method: · Stir Salt, Chilli Powder and Turmeric into Yoghurt · Stir in the Lamb Chunks and set aside to Marinade for 1 hr minimum (can be left overnight in fridge) · Grind to a paste - 1”Root Ginger, Poppy seeds, Cloves, Coriander, Cinnamon stick, Cardamoms and Garlic · Heat Ghee or Oil · Add pinch of Asafoetida · Add the sliced Onion and fry until Golden · Add the Spice mixture and fry for 2-3 minutes · Add the Lamb and Yogurt marinade · Cook uncovered for approximately 30-40 minutes until tender · Remove from heat, stir in Butter, garnish with Fresh Coriander, Garam Masala and julienned pieces of Ginger and serve
Thanks again Rorsch. My dad was brought up in India between the wars, my Grandad was an engineer on the Indian railways curry a way of life.. We're international with our cooking often adapting recipes using ingredients from wherever in whatever combination. Indo/Italian baked fish fillets, marinated with Mrs Jab's homemade sambal baked to flake then dusted with parmesan and flashed under a hot grill.
That fish recipe sounds good - I use parmesan almost as a seasoning on quite a few recipe's that wouldn't normally call for it (but reduce salt accordingly). It's really useful and adds that bit of richness. Most of what I cook could be termed fusion I guess because I love to mix and match flavours and I don't care where they originated.

If the start time is normally 8am, why do you want me to start at 10? Interviewer: Well we spend the first two hours drinking coffee and scratching our balls. No point in your being here for that.
Mrs Jab is Indonesian/Chinese and brings that to the kitchen together with being open minded food wise. Our experiments usually come off, very rarely end a complete disaster. She sometimes gets distracted and doubles or more the chillis. Someone with less experience of spicy food would end up with bum blisters. Looks like there'll be be plenty of time to throw a few ingredients together in the kitchen, better order a barrel of cooking. For delivery and contactless payment of course.
A Lorry containing Vics vapo rub has collided with a Lorry containing Olbas oil on the M27 . Both Vehicles she’d their load . Strangely there was no Conjestion at all.....
I just have to say that if you can get Jamaican curry powder it makes a huge difference to the flavour. cook it for hours. curry goat is my favourite dish ever.
Yes indeed we're fortunate chaps. Mrs J is doing a beef and kidney bean dish, I'll do the peeling and chopping and keep her crisp white topped up. There's a nice ham joint in the freezer that'll be baked with a chinese mixture and studded with cloves, my job, as are the tandoori marinades.
Stoppit!! I am not on a diet, but only eat once a day in the evening (so I suppose I am on a diet), and you guys are making me hungry and it is not even 10am!

Went for my permitted exercise period with the dog. Here she's weighing up whether she should behave like a spaniel and dive in headlong and get the hosepipe when we get home, or just walk to one side.
