We have a couple of "old" heads in the team already. Huds and Bellamy should (between them) be able to offer the advice on the pitch. MM in the changing room. Parker is too vulnerable to injuries (I know Bellamy is the same) but we have a decent enough midfield and Huds usually sorts them out. Kim, I am sure, will also be able to dictate what happens in the midfield. I reckon look at someone coming into their prime (if we can get them) and not the 30+ brigade.
gunner has a mature head on his shoulders too and he passes the ball to a decent level and tackles in midfield so gunner could be the next parker
