Good luck Ipswich. At least there is a market right outside Portman Road so NE will have access to fresh meat for his pies. He could have Fritter Pie, traditional Suffolk fare. Ingredients Enough shortcrust pastry for the base and lid of a large pie dish 4 kg pig fat cut into small pieces 2 kg Sultanas 2 kg Apples (peeled, cored and cut-up) 1 kg Brown Sugar Ground Spice to taste Method Melt down the pig fat in a saucepan. Pour off the excess melted fat for other uses and add the other ingredients to the pan, (sultanas, apples, sugar, spice). Mix together. Line a well greased pie dish with short crust pastry and pour in the mixture. Put some more pastry on the top to form the pie lid and seal down the edges. Brush the top of the pie with dissolved sugar (sugar in water) and bake in a moderate oven.
