Anything by Dave Gilmore, the man is just natural. No theatrics or looking like it hurts, the guitar is a part of his body and is no effort for him, I actually think he could answer crossword questions while playing because he doesn't have to think about it. Phil Lynott was also a very under rated guitarist (his Whisky in the Jar was better than Metallica, sorry Commachio)
Steve Lukather's solo in the Lionel Richie song "Running With The Night". No, really it is! Go to about 3:50 in the video to avoid the tedious Lionel Richie **** and get to the good bit. Lukather apparently sat down and played this as a warm up, the engineer recorded it, and they said ok, that's it. It was the zero'th take! For any aspiring players, here's how to play it (it's way beyond me).

A guitar solo doesn't need to be fast or flash. There's a John Mayall track called Little Girl on the Beano album with my favourite solo on it. It's by Clapton and just sounds so right. Another guitarist who makes it sound and look easy is Hank Marvin. Wonderful Land, Foot tapper and Atlantis are three examples. Seemingly effortless but so effective.
