Try easyjet Edinburgh to Bremen - its only an hour on the train to Hamburg. I've travelled between the two before and it really is simple. The alternative is flying into Lubeck but that airport makes Prestwick look like Heathrow and you might struggle getting a bus link into Hamburg.
