    SACKED Sunderland boss Paolo Di Canio has left a meaty legacy on Wearside.

    Butcher John Stirk created an Italian-themed sausage in honour of Di Canio’s arrival at the Stadium of Light in March.

    And unlike Di Canio, who was ousted on Sunday, the taste sensation is staying.

    The taste-bud tingling recipe of lean pork, sundried tomato, mozzarella and basil has proved a winner with fans. Stirk’s, in Grangetown, has sold 600kg of the Di Canio banger since its launch in April.

    The 26-year-old said he was sorry to see the controversial Italian leave SAFC, despite the head coach never taking up John’s offer to call in and try his namesake sausage, which sold out in under an hour when it hit the counter.

    “We are really sad it didn’t work out for Paolo Di Canio. I think if he was given a little more time, he may have got things right eventually.”

    He added: “In regards to Paolo’s sausage, we will never stop selling it as he’s given Sunderland supporters their best day in living memory, when we beat Newcastle 3-0 on April 14, so even though Paolo has gone, his sausage is here to stay.

    “By popular demand too, we’ve now sold 600kg in weight since he took the job and continue to sell it every single week.

    “Who would have thought Paolo’s sausage would have lasted longer than him?”

    But John has vowed the meat and manager link will continue.

    He is already working on a Bobby Burger, in case early favourite Roberto Di Matteo takes up the Stadium of Light post.
