What's everyone's favourite cheese? Really into my cheddars at the minute, been trying all the big branded ones, the purple wykes one is fantastic.
I tried a Brie with Truffle the other week. Fantastic stuff. I'm sure I don't need to tell you that big branded stuff generally means ****e! Get a waxed extra mature cheddar from your local deli. And make sure it's got the local seal of authenticity!!!

Branded stuff is usually quite ****e, don't get the craze over cathedral city, but I was pleasantly surprised by the purple wykes, it was delicious. I've got a different one now, never heard of it and won't be able to tell you the name til I return to my fridge, but it was ****ing expensive (I got it on half price) and was like gooey cheesey perfection grilled on top of some crumpets. Can't wait to try it on farm made Aberdeen Angus burger. There isn't a proper deli where I'm living at the minute, so mostly taking whichever brands on offer at the super mâché, deli cheese is the same **** off the shelves. Not into soft cheese though.
Ah you see, Didsbury is home to one of the best Delis, (note, no apostrophe) in the world. The Cheese Hamlet! If you're not into soft cheese then I must recommend Old Amsterdam. Hard and Salty!!

I know. They're a right miserable lot,aren't they ? I don't know why we even bother mate. Goats cheese,from that little shop,at the Prinny ave end of Newland ave. Whole grain,i think it's called. Quite sublime it is.
This is going to sound a bit copycat after Carmine's secret bean story yesterday but this is honest truth. I used to have a step better than a deli, there was a local underground cheese dealer known only as 'The Cheese Man'. One of my best mates was the one and only person who knew this bloke was into dealing cheese, but was sworn to secrecy never to reveal his identity to anyone. All we ever knew about him was he was someone we all knew very well, but there wasn't even a hint of a trail to track this 'Cheese Man' down. Anyway, this cheese man, whoever he was, had contacts inside the cheese industry. And I'm not joking when I say, whatever cheese you wanted, he could get it in any quantity at ridiculously cheap prices. (Ironically Cathedral city - one of the dearest on the shelves, was one of the cheapest he could get) We used to chip together £20 and get huge blocks, literally the size of a paving slab. It was unreal. Sadly I'm told the cheese man has severed his ties and is now out of the cheese dealing cartels for good, but still to this day none of us know his true identity.
Never asked, but whatever we asked for, we got. Even cheddar gorge cheese (which is truly breathtaking).
Well funnily enough kebab, I'm building up a good store of knob cheese in my freezer, ready to try making the first ever 'Bobs Cheesecake la Speciale'. Quite excited to see the end result if I may say so myself, sadly it's not a recipe that can be put into mass production, or made when needs be like the trifle, as it takes extensive planning well in advance of the occasion.
