Gammon joints are a funny one and depends on what you like. Me I am not a fan of the whole sweet meat thing generally, but dont mid sweet and sour

I would recommend that you simmer the gammon in some coke (yes I said coke, not diet coke ) for about 15 minutes per pound.
After this (before putting in oven) is when you apply what suite you. SO I would go for say mustard, black pepper maybe a but of cayenne and honey (so a sweet and sour effect)

Then into a hot oven for 20 minutes

you could always bring it to the boil initially to get rid of the curing stuff, add cloves onions etc to the water/coke for flavour

or even initially just cook it in a pressure cooker

have fun and experiment
