And I'm not only talking about the developments in fitness, sports science etc. We've changed a good number of rules, some fundamentally changing the game itself (offside rules/backpass for example)

Well you can't really ignore the fact that the top division has been going for over 100 years. It may be a long time ago but it is still in the record books. Anyway if you want to keep it as relevant as possible why not just make it over the last three years.
Football has not changed a lot over the last say 10-15 years so you should always looking to get the widest ranging relevant results as possible. There would be little to be achieved by not taking advantage of all the relevant data avaiable to you. It has changed off the pitch of course, and there have been minor changes on it, but essentially its the same game. Its not if you go back 100 years because there have game changing rule alterations since then. The backpass rule was a massive change to the game.
