Afternoon chaps. Hope all's well? Been away in Tenerife for a week and busy at graft prior so not been posting much, but did a few decent cooks before I left. Started to get a bit of a thing for scallops and pea puree... This was done with shallots, garlic, chilli and white wine till shallots were soft, then cooked the peas in the broth and blended. Squeeze of fresh lime and topped with crispy bacon. Bit of a **** on for how long they last, but I love em.
Then had a lamb shoulder for Sunday dinner. Overnight marinade in a fresh garlic, rosemary, thyme and olive oil baste (heavy on the salt). Absolutely love lamb... Came off the BBQ in good form. Comptons Gravy Salts for the gravy with the juices... Can't recommend that stuff highly enough. Creamy parmesan leeks... Carrots roasted in white wine, plus some standard fare veg.
