Never had a smoked curry...not keen on smoked foods too much..just alter the intended taste too much imo Haven't had a breakfast for almost a month so for tonights fast break I'm going full breakfast apart from the non halal stuff init No bacon or fried scab
I don't mind heavy smoke, but sometimes it's too much for the family so just use lighter woods, or less of them. I basically start off with a base curry sauce (blended) and put that in a big dutch oven pan in the kamado, then I have a grate that sits over the pan, which I smoke the meat over for a couple of hours. Do the same with the chilli I posted, but smoke braising steak / beef cheeks. This curry had a couple of decent lumps of heavily spiced and marinated shoulder and 500g of balled lamb mince sitting over the pan. I smoked it for 2 hours with a bit of olive which isn't too heavy, then diced up the shoulder and crumbled in the mince. Added the rest of the base sauce and braised the meat off till tender / sauce was the correct thickness. The flavour you get from the smoked lamb fat rendering into the sauce is pretty bloody good.
I've just looked that that like a confused dog, with multiple head tilts... is there a sausage in there somewhere? A hell of a Scouse celebratory supper. I'm sure it was tasty.

I do like a bit of sea bass prefer red snapper but it’s a great replacement…the sea bass we get in Britain is farmed in Thailand fed from sewage pipes I expect
