Indeed adding cream to carbonara is the biggest no-no, as the creaminess of the pasta dish should only come from the raw egg and the a some of the pasta water.
Top tip, get a chorizo that crumbles a little when chopped, you don't want little diced pieces of chorizo in there.
Was going to make a chicken casserole tomorrow but can't be arsed cutting up the chicken so was looking for something different and slow cooking the whole chicken for 3.5 hours is a thing, might give that a go.
