    So it's cooking away now for a couple of hours but just tried the sauce for seasoning and I can already officially say that it's incredible.

    Almost a curry that, coriander, cumin & paprika. Looks nice but a lot of faffing about for a chilli.

    Early on there's a lot to do but once done it's just leave it for 2 hours so it suits me well. It's an interesting recipe, I'm used to seeing people use vinegars and sweetness like honey or Coke or molasses. Using the bean water was also strange but as I'm tasting it I get it now. It's very nice.

    From the recipe it looks full of flavour. Like the addition of the bacon. Did you use the chilli peppers as described in the recipe? I'm guessing it's an American recipe as they seem to have a wider variety of chillis than lidl do.

    Yeah, I'd be happy to try some of the beer and such like but some of those ingredients seem a pain in the arse to source.

    Will give some of the ideas a go though.

    Bar the pork mince, **** that. Tried that in bolognese and it's ****.

    Got no place in chilli either imo, although the pancetta is a definite yes, tried that before.

    The game changers are the dried onion and garlic, things I never use and the water from the beans <laugh>

    You can get Italian sausage in Tesco and can get Jalapenos easy enough. Sainsbury's do dried ancho and I had dried chipotle.

    I used one of my Sierra Nevada beers.

    I tend not to if just bolanaise but with lasagna, & cannelloni I do as they’re similar. The game changer is the sun dried tomatoes and roasted garlic.
