    Yeah, he's top dog. The other one stays well back and is good at catching.

    Soaked the beef in red wine vinegar for 2 hrs. Dried it off and covered it in a mix of equal parts salt, ground black peppercorns and ground coriander seeds.
    Left it for one hour then hung it.
    Pretty much what this bloke does and my biltong box is the same design

    Piece of piss to make. The hard part is the waiting <laugh>

    It needed saltiness to balance out the vinegar. The maggis did it beautifully. Almost as good, dipped in a little salt.
