Mexican inspired spicy fried rice burritos tonight.

Fry off some onions, garlic, ginger, half a chill pepper (with seeds) paprika, cumin, cayenne pepper. Add in the rice and fry it off until the grains start to separate (don’t over boil your rice otherwise it will turn to mush)

Lob in some veggies (I added mushrooms to this mix too) Would use chicken or ground beef but missus is a veggie so ..

Fry the rice until it starts to go a bit sticky and caramelised and all your veggies are cooked through. Then put the rice into flour tortillas and fold into parcels.

Top off with grated cheddar, bung them in the oven for around 10-15 mins and then serve with guacamole, salsa and sour cream <ok>

Piss easy to make too. <ok>

Would usually serve that up with some refried beans and a wedge of lime, but didn’t have either.

I washed the weeds to ensure there was no dog piss on them.

Used to work at a restaurant where we'd serve these up deep fried as Chimichangas and a massive sharing bowl of Nachos.

Not the healthiest way to eat them, but tasty as ****.

Could never remember what the deep fried ones were called. Had them once when drunk on holiday in florida. They are amazing, but beware the steam if you pick one up to eat by hand.....When drunk

Yeah they should come with a warning. Cracking one of those bad boys open is akin to the reactor melt at Chernobyl

Chicken stuffed with roasted red pepper (cheddar cheese) and wrapped in Parma ham. Should have been mozzarella, that way it wouldn’t have all melted/ran out.
Served with a side of roasted veg rice(not in pic at time)
