doing lamb today. It’s boneless lamb shoulder. Should lamb be rare?? All the recipes are slow cooked ones. Will no doubt incinerate this bad boy.

All the fat has been cut away? Have never cooked it before. Did a bone in shoulder once band think it had gone bad. The smell was horrific when I removed the packaging. Thought it said it might smell. Then after cooking it tasted like it smelt and must have gone bad as was horrid.
