Got bored very quickly of The Dom Show so got to prepping tea - spelt with chicken, chorizo, sweet potato, red onion and spinach. Going to be washed down with water - it's looking good!

Wife made some giant scones earlier which were scoffed with jam and clotted cream, have put dinner back a bit. When I feel up to it we will have salmon coated in pesto and pine nuts, on couscous and watercress. With low alcohol beer tonight for me.

Yesterday's leftover chicken magically transformed into an excellent Chicken Pilaf just leaving room for strawberry mousse...

Well that was, by the skin of its teeth, a success. I am not a fan of couscous but this was cooked in stock and with the zest and juice of two lemons, and was absolutely delicious.

The salmon was a touch undercooked, but sorted with a blast in the microwave. Improvements for next time - rocket instead of watercress, add a chopped up chilli (I don’t know why I don’t just do this automatically for any recipe) and fresh coriander to the couscous. Could easily replace the salmon with prawns.

Tonight a third lockdown outing (I think) for the spicy sausage, sweet potato, onion and garlic feast, a solid favourite. Might have overdone the amount of chipotle concentrate I added so rather than red wine standing by with beer.

After an afternoon gardening had a lovely iced peach tea ahead of lemon and dill salmon with citrus and chilli dressed salad, a staple in hot weather like today. Strawberries and ice cream to follow with strawberry jelly...

Lazy tea today as finished a bit later than planned.

Aldi chicken burgers (fresh mince, not processed breaded ****e), steak cut chips and salad. Followed by fresh strawberries and double cream - stuffed!

Never eaten so good... I have said that before. I know
Tomato in the hole tonight...like toad in the hole but with loads of different tomatoes (vine, plum, little small button ones) onion, garlic, rosemary and thyme. Absolutely stunning

Plus a large can of Stella as it was so hot

Good luck with the bamboo there Tramore, as you would experienced, its rotten stuff to try and get rid of.
Had a friend who needed to get a backhoe in to dig it up.
You would certainly deserved a G & T or four............

l'll pass on the couscous though, never have been able to enjoy it.

Last night, we had homemade ravioli and apple pies sprinkled with sugared cinnamon, from the new $29 pie maker.
It's idiot proof, so l felt right at home using it.
I took it out of the box & plugged it in ( after wiping it clean ), Mrs Squat did the rest.
