About to decant a 1987 vintage offaly port.....has to be drunk as starts to deteriorate very quickly after opening......c'est la vie
Been out for a nice long walk whilst the slow cooker does its thing, cooking all the veg, mushrooms and herbs. Enjoying a cold beer while the potatoes boil ready for some herby mash. That's when the Chilean merlot will be partaken.
Did a chicken roast for the three Ubersprogs. Uberette, being something called a pesky-tarian (me neither) had a salmon steak, whilst the two boys and moi had a whole chicken plus a smattering of additional breasts, some sausages, broccoli, carrots & squash, roast tats, Yorkies (I know) and gravy. I hadn’t realised that I didn’t have any stuffing mix, which was pity. Puddlywuds comprised a tub of Ben & Jerry’s and an amusing game of Pictionary.
2/3rds of Port consumed it was actually a 1985 vintage that was bottled in 1987....delightful nutty taste, gorgeous colour drinking beautifully.....amazing to think it's 35 years old... We had some food also....
Packet stuff tonight, wife and daughter having the Charlie Brigham red Thai curry, but this is so heavy on the salt that I am having a Keralan chicken biryani.
Baked potatoes, yesterday's cold beef and a mixed salad with beetroot and avocado added to it. Maybe a glass or two of pinot grigio as Mrs Nines is still drinking during the week.
Chicken thighs are marinading in a honey, whole grain mustard, lemon zest and juice and garlic sauce as the potatoes bake. Plus something green I suppose.
Home made spaghetti Bolognese, if I could only eat the same meal everyday for the rest of my life it would be my wife’s spaghetti Bolognese
Another old favourite tonight Lincolnshire Pork Sausages with a thick onion gravy, creamy mash and beans...
We had the same tonight. When I cook a Bolognese sauce I cook as much as I can ( usually enough to feed eight ) and freeze it down. You can then use it for another Spag Bol, a lasagne or add some spice and red kidney beans to make Chili con Carne. A nicely dressed side salad and bruschetta bolsters it up and looks good too. My side salad usually contains these ... Lettuce Tomatoes Cucumber Avocado Mozarella Croutons Italian Seasoning Vinaigrette Parmesan Cheese Olive Oil Almost a meal in itself.
Sub out the vinaigrette for aged balsamic vinegar and the lettuce for rocket & spinach and you have a half decent salad there.
I do sometimes add or replace those. I also find that a Caeser Sauce works well with the parmesan instead of the vinaigrette. That's what's so great about it, you can add or subtract as you please. It's the dressing and subtle addition of cheese that elevates it.
Another great combo that works is ... Rocket Sliced Peaches Parma Ham Gruyère Cheese Reduced Balsamic Ground Cloves Seasoned with salt and pepper And add a vinaigrette dressing ... Simple, tasty and superb.
