I've just come back from shutting down my business. And it does not feel temporary. I'm clinging on to something that feels like hope at the mo. But my family are well, and we are drawing up plans to keep our bodies and minds healthy, that has to be the focus right now.
I mentioned a recipe in the Covid19 thread - yer tis... Curried Goat 1 Kg Goat meat in chunks Juice of 1 Lime lvl Tbsp Salt (sounds like a lot, but it needs it) Tsp Ground Black Pepper 1-2 Scotch Bonnet Pepper – use a less hot variety if preferred ½ Tsp Dried Thyme ½ Tsp Ground Allspice 3 Tbsp Curry Powder (whichever brand or variety you fancy or make your own up ) 2 Spring Onions, sliced 1 large Onion, thinly sliced 3 Cloves of Garlic 4 Tbsp Vegetable Oil 3 Large Tomatoes, seeded and roughly chopped (or a tin, just as good in my opinion) 440 ml Tin Coconut Milk 1. In a Mortar and Pestle or food processor, grind up the garlic cloves, scotch bonnets and all the dry ingredients into a smooth paste 2. Put the Goat Meat, Spice paste, Sliced Onion and spring Onions in a bowl in a bowl, mix thoroughly and put in the fridge overnight to marinate. 3. Heat the Vegetable oil in a heavy based pan with a lid 4. Remove the meat from the marinade mixture and brown off in heavy based pan 5. Add the Marinade and the Tomatoes – Cook till well combined. 6. Add the Coconut Milk plus two tins of water 7. On the Hob, cook with lid on until Goat Meat is tender, remove lid and add the Lime juice, simmer gently until slightly reduced and thickened. Can also be done in a slow cooker, or a heavy casserole in the oven
