CHILI OIL.jpg For some reason even the better Cantonese restaurants over here don't serve it (even with dim sum) so I have been making my own for a few years now.

I don't make dim sum at home but rustle up things like Sesame Prawn Toasts, Salt & Pepper Squid (or prawns), Deep fried king prawn balls etc that wouldn't taste right without it.

So, today produced another batch which is now cooling and waiting to be skimmed & put in jars - It keeps for months.

I bought some salt and pepper chips from Iceland, they were not the Chinesey goodness I was hoping for, they were literally chips with salt and pepper on <doh>

The best hot sauce I've found is Amazon Habanero Hot Pepper Sauce. They do two varieties Picante and Muy Picante and it's made in Columbia South America not Washington England. Very hot and it really numbs your lips and tongue for a good 20-30 minutes.
I don't know if you can get in in the UK I had never seen it before but if you can get a bottle and try it on meat pastries or as a rub pre barbequeing.

Hi M8, You mention DIM SUM, the Chinese Food store by where the old 'Continental' was in the town have a massive selection of it and it is reasonably priced. I get a few flavoured and type bags, boil or steam a selection and make a "Soy, Honey, Chilli, Ginger and Garlic" dip which tastes amazing.

Try the Dim Sum next time you are down it only takes 6 minutes to cook!
