My way is easy. The objective is to cook the food without direct flame or heat. A bit like a smoke filled oven. I converted a normal charcoal BBQ by drilling holes in the top and attaching a chimney. Using charcoal I set up on the far side of the grill and add water soaked wood chips to the charcoal when it has stopped smoking. I place a tray of water under the food grill and then put the meat on. The vents at the bottom of the BBQ regulate the burn. Pork belly does in about an hour, whole chicken in around two and a half hours. Chicken thighs take about three quarters of an hour. Shop bought marinades like Paul Newmans are fine. Just baste with them every twenty minutes. Chicken without any marinade cooked in a smoker tastes really different to anything that you get on a gas or charcoal BBQ. It takes longer, but the meat doesn't cinder. I also have started to use mine as a pizza oven. Great for parties. I have a pizza stone and a thin and crispy pizza cooks in about two minutes. I don't use a lot of wood chips. Just enough to add a little smokiness. Last time I used it like this we did twelve 18 inch pizzas in under thirty minutes. Home made bases and everyone can select their own toppings. The fussy ones go last!

Heres a little secret that I will share with you. Get an old fridge that don't work any more, put a small bbq in the bottom with some wood chips and let it just smoke all day, add a little water if it gets a bit hot and keep the door shut. I use one to smoke salmon and it comes out great. Broken fridges are free and its the best way to go!
