Dear TBB Reduction sauces are quite simple really and most liquids can be used. Wine is fairly straight forward. If you want 1 cup of sauce use 2 cups to start with, deglaze where possible and heat until it reduces If you want a quicker way the there are 2, these are more thickners but work as well 1 - make a roux, basically butter and flour. Personally I dont like this one as it ieasy to undercook or overcook the flour, and its fattening 2 - The chinese do this a lot, a small teaspoon of cornflour mixed in a few of teaspoons of water, add to sauce and it will thicken I know I said 2, but this is my pesronal favourite cheat, add some bisto gravy granules whilst cooking. Be careful doesnt take a lot but IMO delicious You can also add honey/ketchup etc if you want it sweet happy cooking
