It goes into fruit crumble so I thought it would count. So harsh.

 

If you are only putting rhubarb in your crumble then it would be a vegetable crumble, if you were putting rhubarb into a crumble with fruit it would be a fruit and vegetable crumble. Admittedly, vegetable crumbles are a harder sell to customers though.
