It's the last sandwich you'll ever eat and you have to pick a cheese -so which one do you put inside the bread or on the toast ? Cheddar ? Gouda Roquefort? Edam ... As I'm feeling gracious you can also add a chutney, sauce or pickle I'm going for a toasted Red Leicester on home-made crusty bread topped with Worcester Sauce
Why is it the last sandwich? If it's because I'm about to die then I'll go for something proper stinky. If it's because sandwiches are about to me made illegal I'll choose a warm Camembert with a stone baked ciabatta.

Red Leicester & pickle or chutney for me. That said like, when I worked in a hot mold shop I often had a Stinking Bishop at the end of the shift.

For a sandwich I would chose Stilton and Blueberry. For a plain cheese on toast I would choose crumbly Cheshire..
That's what my wife had on New Years, just a buttered baguette to dip in a baked Camembert with garlic. Amazing.
Cheese is a garnish and little more. A sandwich isn't a sandwich unless there's some sort of meat in it. Otherwise it's little more than a bitchwich.
No idea what that'll look and taste like but sounds great! For me. Toasted Olive Bread, brie and onion chutney!
