That's not an expression I've ever heard; it's usually 'head them off at the pass'. In any case, the sun rises in the East, sets in the West and is due South at midday. You can estimate true North reasonably accurately knowing the time of day and noting the sun's position. It's a bit more difficult if the sun isn't visible , but moss tends to grow on the North side of trees, buildings etc. because that side's in the shade all day. I can't help with your other 2 questions.
