You mean the chick peas? Tinned is easiest but if you have time buy dried and soak them overnight before boiling. The other important ingredient is tahini, always use a decent brand. You can blend in fresh lemon as well, that's nice. Here's a simple recipe from Uncle Chilco's Cookbook: 400g boiled or canned chickpeas (14 oz.) 3 tbsps tahini juice of 1 large lemon or 25-30 ml bottled to taste 4 tbsps extra virgin olive oil 2 cloves of garlic, minced (or as many as you like) 1/2- 1 tsp salt 1/2 tsp ground cumin 2 tbsps water a pinch of paprika and a bit more olive oil for garnish Mix the tahini and lemon juice first, then add the chick peas, then the olive oil, then everything else except the paprika, pulsing the mixer all the time. Pour into a serving dish. Dust with paprika and a sprinkle of olive oil before serving. Gert lush, as we say in Somerset.
