Ooh scotch bonnet. I've grown them before in the window sill. Only thing is that, although hot, they don't carry the same true flavour as the ones from the Caribbean. Having a Jamaican wife, I've become fancy in that area... The "hot things from Jamaica" area If we ever meet, you need to bring one with you. Yours may well be better flavour if you leave them for a year though - I couldn't. Do you bottle and sell your sauce?
I don't make enough to sell, personal use only . I make a fair few things like cured salami, chorizo, even beef jerky plus my own sausages of various varieties. I had some chef training many years ago and have run pubs and restaurants but I just like to make stuff for friends and family these days - Christmas pressies from me are usually little hampers full of goodies. I'll see if I can dig some sauce out and arrange to meet you when I can, as there's nothing better than someone who appreciates the finer ( hotter) things in life. My Jamaican friend reckons my curried goat is as good as her mum makes, which is good enough for me. Unfortunately, I don't get to many matches at the moment as work (the joys of IT contracting)and family have taken a lot of my time so I didn't renew my Season ticket this time around, but I'll try and arrange something, even if it is a summer friendly.
